Chris Shaw (Uber Fit)

We challenged Uber Fit founder Chris Shaw to take part in Camper Kitchen and set him to task on creating a healthy breakfast in the confines of a VW Camper. ''I really enjoyed the challenge, it was fun to try and cook in such a small space. Despite looking like a hippy I've never been inside a VW let alone cooked in one. It came with its own unique difficulties, but not many things beat cooking in the great outdoors and eating in the fresh air.''

Ingredients (Serves 3)

3 x Burrito Wraps

1 x Tin of Chopped Tomato

1 x Tin Butter Beans

6 x Eggs

1 cup of whole Milk

2 x Avocado

1 x Lime

2 x Red Chili

Black Salt

Paprika

Tabasco Sauce

A Handful of Coriander

A splash of oil

Method

  • Chop chilies and coriander in preparation for cooking.
  • Add beans and chopped tomato into a sauce pan, mix and begin to heat on low temperature.
  • Add oil to frying pan and heat, add milk and eggs stirring occasionally for scrambled egg (be careful not to let stick).
  • Add Chilies, Coriander and Paprika (to taste) to Tomato and Bean mixture. Stir in well. Add a touch of black salt.
  • Once eggs are done its time to dish up. Add 1/3 Tomato and Bean mixture to each wrap along with 1/3 of the scrambled eggs.
  • Chop avocados and slice lime
  • Sprinkle chopped avocado on top then add a squeeze of lime juice to each.
  • Wrap them up and enjoy!
